If you’re on TikTok, then you’ve probably seen the Baked Feta Pasta recipe being made all over your For You Page. After seeing it dozens of times on mine, I just had to see what the fuss was all about…and it delivered! The feta cheese turns golden brown and oh so creamy after being baked. The cherry tomatoes get roasted and release all their wonderful juices. Then you finish it off with a handful of fresh basil and freshly grated parmigiano reggiano. It creates a creamy, satisfying and refreshing feta pasta dish! Did I mention how simple it is to make?!
All you need is a few simple ingredients:
- Feta cheese: You want a block of feta cheese here, not the crumbled kind for Greek salads. I used a lactose-free one cause I’m lactose intolerant…
- Cherry tomatoes: Grape tomatoes would also work well here. They provide a wonderful burst of flavour.
- Garlic: Mince the garlic for better distribution. If you’re fancy, use roasted garlic.
- Olive oil: Drizzle this all over your tomatoes and your block of feta cheese.
- Oregano: Adds some nice seasoning. You could also add spice here like red pepper flakes if you like.
- Basil: Use fresh basil, not the dried stuff. It will taste way better and provide a beautiful pop of colour!
- Pasta: Any pasta will work here, preferably something with ridges to pick up all the sauce like rotini or penne. I used whole wheat (healthier!) rotini here.
- Parmigiano reggiano: Freshly grated. None of that shredded stuff that comes from a can.
- Maldon salt: Great as a finishing salt and adds a tiny bit of crunch. Use smoked maldon salt if you like the smoky flavour.
Next, throw your tomatoes into a baking dish and drizzle olive oil, garlic and oregano all over them. Make a little space for your block of feta. Add your block of feta and drizzle olive oil all over top. Bake in your oven until the tomatoes are blistered and the feta is golden brown. It will be super creamy once it comes out of the oven.
Break up the creamy feta cheese with a wooden spoon and squish down the tomatoes a little bit to release their juices. It creates the most creamy, dreamy sauce to coat your feta pasta in.
