This pomegranate guacamole is so festive and just perfect for the upcoming holiday season! The red and green immediately reminds me of Christmas. This would make a great holiday appetizer or a delicious snack!
This recipe was actually inspired by a friend of mine that loves pomegranate and she was the first one that introduced me to the idea of adding pomegranate to guacamole. Now that I’ve tried it, I can see why she loves it so much. The little pop of sweetness from the pomegranate adds a beautiful colour, texture and brightness.
How to make the best guacamole:
- Use ripe avocados! Ripe avocados mash up easily and will create a nice creamy texture. See below for tips on picking a ripe avocado.
- Taste for seasoning. Like a bit more acidity? Add more lime juice! Like it spicy? Add some jalapenos or cayenne pepper!
- Chill the guacamole in the fridge for at least an hour before serving to let all the flavours meld together.
Avocado tips:
- Avocados are ripe when they are darker in colour and yield to gentle pressure when lightly squeezed.
- Immediately mash the avocado with lime juice once cut to prevent browning.
Pomegranate tips:
- For a ripe pomegranate, pick one that feels heavy for its size with a deep coloured rind and a squared shape.
- Pick the seeds out in a bowl of water to avoid splashing pomegranate juice everywhere. Bonus: The white rind will float to the top, while the seeds sink to the bottom. Simply scoop the rind out and drain out the seeds!
How to serve guacamole:
Serve it with whatever you like! I enjoy eating it with tortilla chips, quesadillas, and burrito bowls.
How to store guacamole:
Guacamole can be stored in the refrigerator for several days. Make sure to cover the guacamole tightly with plastic wrap to prevent browning.
